Creamy Quinoa Porridge

A great way to start the day, and a great energy boost before a big workout (I find 1.5 hours before a workout to be just right for tapping into the energy provided by this amazing dish, and without feeling too full during my workout). For a perfectly balanced breakfast, enjoy with a handful of fresh fruit, or chopped apple. If you are working on building muscle, be sure to have two egg whites with this as well.

 

Creamy Quinoa Porridge

Prep Time: 3 minutes

Cooking Time: 25 minutes

Serves: 6








Ingredients

    • 1/2-cup of Bob's Red Mill Quinoa Grain (I buy a big bag of Quinoa at Costco)

    • 1/4-cup of Bob's Red Mill Creamy Buckwheat ceral OR, 1/2-cup of Quinoa Flakes

    • 1/4-cup of Bob's Red Mill Teff grain

    • 1/4-cup Let's Do Organic, Unsweetened, Finely Shredded Coconut (optional)

    • 1 heaping handful of Unsweeted, dried fruit, chopped into bite size pieces if needed

    • 2.5-cups of Water, plus more as needed

    • 6-ounces of your favorite Unsweetned milk (soy, cow, hemp, coconut, rice, etc. etc.)

Directions

1) Measure the milk and set aside at room temp (you don't want the milk cold)

2) Measure all of the ingredients into a large lidded pot and slowly bring to a boil on medium heat, stirring occasionally. After it comes to a boil, reduce the heat to very low, cover and let cook for 15 - 25 minutes, or until tender.  Give the porridge a quick stir every 10 minutes, and add water if it gets too thick or starts to stick.

3) Pour in the milk, stir, measure 1/2-cup into bowls, top with a small handful of chopped apple or berries and serve.

 

Make Ahead: omit milk, measure into single serving bowls, place lids or press-n-seal on top, and refrdigerate. When you are ready to eat it, just take the lid off, add a small splash of milk and fruit, and nuke it. Or, warm it up on the stove. Yummy! Instant breakfast.

 

Need a Super Fast Meal/Snack: Add a 1/4 cup of leftovers to a smoothie and blend until smooth.
