If having Celiac has taught me anything it has taught me to listen to my body. When I consistently listen to my body and give it the food it needs - versus the food I emotionally want - I feel strong, healthy and in control. Take eggs, for example. I have never been a big fan of eggs, but after an intense workout my body craves egg whites for their amazing complete proteins, so I eat egg whites. A lot of egg whites. Of all the combinations I have devised to make eggs enjoyable, and not just something I choke down, this recipe is by far my favorite. I hope you try it, and enjoy every nutritious bite.
Ingredients
·4 egg whites
·1/4 cup of fresh broccoli
·1/8 cup of yellow onion
·1 small clove of garlic
·1 small handful of fresh baby spinach
·1 fresh basil leaf
·2 whole mushrooms
·1 mini sweet bell pepper (any color)
·1 dash of cayenne
·1/2 tsp olive oil
·1/4 of a small tomato, chopped
·1/4 of a medium apple, sliced (try pink lady apples)
·1 large fresh strawberry, sliced
·5 fresh raspberries
·10 fresh blueberries
·6 grams (or 1 scant tablespoon) of golden flaxseed meal (any flax is fine, as long as it is finely ground.)
·Set your oven to broil and move the oven rack to the 2nd tier from the top.
·Arrange the fruit on your plate and sprinkle with all of the flaxseed meal. Set aside.
·Toast the Sandwich Petal in the oven under the broiler, just until crispy. Remove from oven and set aside. Keep an eye on your sandwich petal to ensure it doesn’t burn.
·Toss everything from the egg whites down to the cayenne into a blender, in the order listed. Blend until the mixture is nearly lump free, about 1 minute.
·Meanwhile, set a large skillet on medium low heat.
·After blending the egg mixture, add the oil to the heated skillet and carefully use a paper towel to coat the skillet with the oil. Pour the egg mixture into the heated & oiled skillet. Stir (scramble) the egg mixture while it cooks.
·Spoon the cooked eggs onto the center of your plate and top with chopped tomato
·Snap the Sandwich Petal in half and place along side your eggs.
