In the gluten baking world, cake flour is used to make light and airy baked goods (pound cake = "heavy" vs birthday cake = "light & airy"), and all purpose flour for nearly everything else.  So why, in gluten-free baking, should we not use gluten-free cake flour as well?  Well, I suspect it is mostly due to the fact that we don't see "gluten-free cake flour" in the stores.

Unlike gluten cake flour, this gluten-free cake flour will not be the only flour you will need to make a tasty gf cake.  It is simply a base that you will add to a flour blend.

How To Make Gluten-Free Cake Flour:

Use this gf cake-flour recipe as the base of your flour blend, when a light and airy cake is desired.  If you frequently make cakes, go ahead and double or triple the recipe to keep it on hand.
